A Vegetarian Pasta Dish That is a New Favorite

 It's been a week, so to speak and I apologize for the silence. Appliances replaced, deliveries here and there, broken stair lift, second time in two weeks, sending the supervisor tomorrow, doctor appointments, one thing after another. No time to put needle to fabric. Only essential travel down the steps, difficult, the last of the tomato vines pulled, gathered about 20 unripe tomatoes, the herbs are still struggling along, this parsley has reached it's peak and will be cut back and dried this week end. That's it, not excuses, just facts. 


 Not long ago, at the grocery check-out, the young lady looked at my three leek bundle in the famous plastic bag, and said...."what do you do with these things?" Not the first time I have heard this, but with each question I have a new answer. Why? Because I do read a lot of recipe books, watch cooking shows, and experiment at home. This is one of those new discoveries from The Blue Jean Chef, Meredith Laurence. Perfect for those who eat little or not meat or need a new option for "Friday Food!"

Keeping variety in the menu has become more important. I think husband will move to the pony barn if he sees one more piece of fish.  I have discovered some new sources of inspiration. This dish is a nice lunch entree with a salad or a main course alternative. 

  • Friends in Florida have checked in, minor damage to homes, trees down, power outages but all is well. I hope and pray those in dire conditions get be helped.
  • I am reading a very good book, The Last Bookshop in London, by Madeline Martin. As Hitler consumes Europe, a young woman lives her life in large and small ways. A touching account of her life in a dusty old bookshop, bombs dropping, friends scattered. Nice read. 
  • The sweet baby awaited by friend and her family has arrived safe and sound. All is well. What a miracle is new life.
